Momma T’s Cheese-steak

So yes I live outside of Philadelphia, where the cheese-steak was born and there is much debate as to who has the best, but I have my own version and it is tasty and easy and I think healthy.

What you will need…..

  • medium onion sliced thin
  • 2 small or 1 large clove of garlic, minced
  • tsp salt and pepper (plus more for meat)
  • 2 Tbsp olive oil
  • 1 pound chipped steak
  • Worcestershire sauce
  • butter
  • long rolls
  • cheese (optional)

I didn’t actually use all this onion it was huge but all I had so I used half of it.

Onions sliced as thin as possible, garlic small as you want, salt, fresh cracked pepper, and olive oil.

Heat 2 tbsp of oil in skillet on medium-low.

Add your onions and garlic and salt/pepper.

Saute till onions are caramelized, I personally do not like to add sugar to onions to make them caramelize, they have enough sugar in them. The key is to cook them low and slow (like over 10 to 15 minutes depending on how much you have, just keep eye on them and stir them occasionally). Once they are caramelized remove them from skillet and turn up your skillet to medium.

Now here is the chipped steak, it is paper thin.  I wasn’t sure what cut of meat it was so I did a little research and from what I can tell this is a round roast sliced very thin.

cook each piece of steak in skillet, sprinkle on dash of salt and pepper as well as couple of dashes of Worcestershire sauce. You will only need to cook the steak about 30 seconds on each side, so make sure you do not walk away!

So once all pieces of meat are cook you can assemble your sandwich. Oh I almost forgot! For your bread, slice open and lightly butter each side and toast them, this makes the sandwich extra good. And add your cheese then put on your meat and onions. I used provolone in this pic cause that is what I had, but you can choose any cheese you want, including melting some Velveeta and pouring over the meat on yours, mmmmmmm!

Options:  Add pizza sauce, pepperoni, sauteed mushrooms, & mozzarella for a pizza steak; BBQ sauce; horseradish sauce *Tbsp Mayo, tsp Dijon mustard, prepared horseradish, 2-3 dash Worcestershire (also awesome on steaks that’s another blog)

Make a nice house salad and it’s a meal!  Hope you enjoy!
