Broccoli Salad

This is a delicious way to have broccoli, cheese, onions, and bacon! Need I say more? Now I have made this with out the cheese because my husband has a weird genetic defect where he doesn’t like cheddar cheese (unless it is melted like in fondue or cooked) and it is still good. However if you like cheese in any form then you must, must, must add the cheese!


  • broccoli florets, as big or small as you want
  • half  of a large sweet onion chopped
  • about 6 slices of bacon cooked and crumbled (could be more if you like)
  • about 1 cup shredded cheddar cheese (more if you like as well)
  • 1 cup mayo
  • 2 packets sweetener
  • S&P to taste
  • 1-2 Tbsp white vinegar

Cut up the broccoli and onion bite size or smaller if you like. Cook the bacon however you want, skillet or microwave (I used the skillet this time). Cut the bacon into bite size pieces prior to cooking if using a skillet or just use your hands to break up the bacon into bite size pieces after it’s been cooked in microwave.

In your bowl add the mayo, sweetener, S&P, and vinegar; whisk till combined and smooth. Taste it and if it tastes too tart then add bit more sweetener, same if it is too sweet just add bit more vinegar. *This is my basic slaw dressing as well handed down from my Grandmother, Mother, and & Aunts in them mountains of WV.

Add your broccoli, onion, and cheese to dressing and toss well. Make sure each broccoli has some dressing on it.  Now I usually make this ahead of time to let the dressing soak into the veggie’s. If you add the bacon now and then put in the fridge the bacon will go soggy. So I usually will not mix in the bacon till right before we are to eat, so it stays crunchy. (Oops guess I didn’t capture a picture after I added the cheese!)

Now your bacon is done, remove it with slotted spoon to paper towel lined bowl and set aside to mix in salad right before you eat. And of course reserve your grease (I am gonna use this in a spinach salad warm dressing in another recipe).

When ready to eat toss bacon in with broccoli, onion, and cheese and eat up!

*Other items I have added over the years are shredded carrots, raisins, craisins, and cauliflower. I also make this basic dressing and add it to cauliflower, onion, frozen thawed peas, and shredded lettuce! Hope you enjoy this. let me know what other ideas you can come up with for this salad.
