Patata & Salsiccia (Tators & Sausage)

This was one of my Noni’s favorite things to make, beside baked chicken. She loved mashed potatoes but this was, I think, her second favorite way to eat potatoes. She always made it with sweet italian sausage.


  • pound of sausage (I had keilbasa in the fridge but usually use sweet italian)
  • 3-4 potatoes roasted
  • medium to large onion (depends on how much onion you like)
  • clove of garlic (or you can use granulated garlic powder too)
  • Salt & pepper to taste
  • sometimes I add oregano too depends on my mood 🙂

Roast your potatoes first. I rub a little olive oil on the skins then put in 350 degree oven for about 40-45 minutes till tender (if the center is still little hard is ok cause they are gonna cook more in skillet).

Then in skillet heat up some oil on medium high heat and add onions salt and pepper (you can chop or slice onions depends on your preference). Cook them till slightly translucent, then remove from heat.

While your onions are cooking cut up your sausage. Now, this night I used keilbasa sausage that is already cooked so it didn’t take as long to make, however if you are using italian sausage you will want to cut the links into sizes you want and cook till they are done (I.E. no longer pink in middle). *FYI when I use raw sausage I will remove the casing and break into bite size pieces cause that is how I role…I mean we like it.

Once your potatoes are done cooking, cut them into pieces. Heat some olive oil and butter in skillet on medium high, you want the butter to be nice and bubbling (which means it’s nice and hot) then add in potatoes. Try and get them in single layer and let them cook for 5-7 minutes with out touching or moving them, you want a nice crust on them.

After you have gotten a nice crust on the one side flip over tators and add in your onions and sausage. Cook about 10 more minutes and done!

My kids like it served with a side of ketchup. I like it with some cheese on top as well, cheddar or parm. Especially if it sweet italian sausage. I also have added a touch of tomatoe sauce to this and melted mozerella on top, makes it taste like a potato and sausage pizza. Enjoy!
