PW Pecan Pie Muffins

All I can say about these muffins is DELICIOUSNESS! And super easy to whip up.


  • 1 cup Packed brown sugar
  • 1/2 cups AP flour (AP=all purpose)
  • 1 cup chopped Pecans
  • 2/3 cup softened butter
  • 2 whole eggs beaten

Preheat oven 350 degrees

Grease muffin tins.

I am showing this picture because I actually used half a cup of regular pecans and half a cup of sugar coated & roasted pecans I had in the fridge because I thought it would be different. I chopped them up and put them in.

In bowl stir together brown sugar, flour and pecans.

In separate bowl, beat butter and eggs together until smooth (to be honest it never got smooth and my butter was very soft).

Stir into the dry ingredients, just until combined.

Spoon batter into muffin tins. Fill about 2/3 full.

Bake for 20 – 25 minutes.

Cool on wire racks. *Caution— DO NOT attempt to remove the muffins from tins till they are completely 100% cooled or you will rue the day!!!
