Zucchini Pancakes

This is a recipe from my best friend’s Mom, Ginny. She makes these in summer when Uncle Bob’s crop of zucchini is in. (Of which Uncle bob is my best friend, Shelley’s uncle).

Ingredients

  • 1 cup zucchini grated
  • 1 whole egg, beaten
  • 4 Tbsp. AP flour (or I use pancake mix like Bisquick too, makes them fluffier)
  • 1 tsp. minced onion
  • 1 tsp. baking powder (makes them fluffy)
  • 1tsp granulated garlic powder (I added this for more flavor)
  • oil for cooking (2-3 tbsp)

 

Mix ingredients together and fry them in hot oil.

I put a big spoonful in the skillet and then use the spoon to flatten it down into the pancake form.

I personally do not shallow fry mine like Ginny showed me, I just put little oil in skillet or on my griddle and make them more in the line of a pancake.

Now I was taught to eat them with sour cream but I have since had them with plain apple sauce if you want them sweeter and it is tasty too.

Options: You can grate up yellow summer squash or carrots too, add fresh herbs or fresh garlic. These would be great as the bun of a turkey burger. Enjoy!
