BBQ Chicken Pasta Salad

So this is a recipe that I got from my in-laws. It is super easy to make and super yummy.


  • 2-3 boneless skinless chicken breasts
  • BBQ sauce (your choice of flavor)
  • box of pasta (tri-color is what recipe calls for but use what you got)
  • 1 bag of salad
  • small sweet onion chopped
  • 2 ribs celery chopped
  • tomatoes, chopped
  • /12 red bell pepper chopped
  • 1/4 cup tarragon or white wine vinegar
  • 3 Tbsp Mayo
  • S&P to taste

Grill the chicken breasts making sure you coat them with BBQ sauce. When they are cooked chop them into bite size pieces.

While Chicken is grilling, boil water and cook pasta to al dente, drain and put in large bowl. Prepare you veg while waiting for pasta and chicken to cook.

*As you can see I added in carrots cause the kiddos love them!

Once chicken and pasta are cooked (& chicken is chopped up) add in veg and mix well.

In smaller bowl mix together vinegar, mayo, & S&P. Then pour over salad and mix well. You can eat right away or put in fridge to let the dressing soak in.

Options: Any veg you have or want to add would work, add sliced almonds, raisins for sweetness, cheese (feta or parm shavings would rock!). Might work well with shrimp too? Enjoy!

P.S. Here is a drawing that Casey did on the chalk board of a kitty. Apparently he drew the bones first (the two legs down bottom) then put on the fur (the lines going across the legs), and added the whiskers. I swear that is what the hubby told me he said and did. Guess the Hearn art gene is kicking in (pretty good for a not quit 3 year old).
