Tracy’s Greek Pasta & Spinach Salad

I got this recipe from my friend Tracy, who brought it over one day when we had a play date with our kids. All I can say is yummy and so super easy to make!


  • 1 bag of baby spinach *I actually used half the bag of spinach and added half a bag of arugala
  • 4 oz of feta cheese
  • small bottle of greek dressing (or make your own)
  • half a box of cooked pasta * I can not think of the name of the type I used but any short pasta would work
  • small can of sliced black olives
  • S&P to taste


Cook your pasta till al dente, drain, cool (add little bit of olive oil so pasta won’t stick together)


In another bowl, place spinach, feta cheese, olives. Add pasta to this. Pour dressing over all and mix well. Cover and put in fridge so flavors can mix. * I didn’t pour the entire bottle of dressing on, because the pasta will soak some of it up and may be too dry then I can add the rest right before I eat it. But you can do as you please.


Options: Add some grilled shrimp or chicken; add some craisins for sweetness; add some onion, slivered almonds,  or croutons if you want.
