I have a confession….

I have a confession to make….I have gone Wheat free. There I said it, judge it as you like, but I have been wheat free for two weeks now. I do not have Celiac disease but have been trying to loose those ever looming pounds that just will not go away from my lower half. I heard about Wheat Belly from television and decided to read the book about it. Well I have to say I felt like he was writing the book about my lower half, my joints, and my energy level. So I figured why not give it a shot. Now I am not, by any means, a “health nut” (whatever that really is), but I have to say I sleep much better, I have more energy, and my “carb cravings” are basically gone. I am a little disappointed in the scale number, as it has not plummeted as I was lead to believe, but I am only 2 weeks in so I will be patient (I hope).

I was very nervous as first, but luckily my “withdrawal” didn’t last but 3 days and wasn’t very bad. I have been using recipes from the book, as well as the multitude of websites and well haven’t missed bread or pasta that much. I guess it doesn’t hurt that I can eat full fat cheese and basically anything just made a little differently.

So anyway, my kids and the hubbs wanted pizza last night (as is their usual Friday night request), and seeing as how I had some leftover from Casey’s birthday party pizza in the freezer I gladly agreed. However I had to figure out what I was gonna eat.

Now there is a recipe for wheat-less pizza in the Wheat Belly book, but I found one on Paula Deen’s site and thought now there’s a recipe for me to try.

And it was FABULOUS!!!!!

So I thought I would share with you.


  • 2 1/2 cups grated cauliflower (I used my mini food processor, because I happen to like the skin on my fingers)
  • Non-stick spray
  • 1 large egg, lightly beaten
  • 1 cup shredded part skim mozzarella
  • 2 tablespoons grated Parmesan cheese
  • Kosher salt and freshly ground black pepper
  • 1/4 cup homemade or store bought tomato sauce
  • 1/2 cup shredded part skim mozzarella cheese

Heat oven to 425 degrees. Spray a pizza pan or cookie sheet well.

Place in a large bowl and microwave for 7-8 minutes, or until soften. Remove and let cool.

This is the mozzarella and Parm Cheese plus egg.

Add in cooked but warm cauliflower.

Mix in the egg, mozzarella, Parmesan cheese, and salt and pepper. Once combined, pat into a 10-inch round on the prepared pizza pan. Spray lightly with non-stick spray and bake for 10-15 minutes, or until golden.

As you can see mine got a little more golden than PD would have had, but I like burn cheese so, watch it carefully.

Top the pizza with the sauce, mozzarella, sun dried tomatoes, olives, or whatever you would like.

Bake in the oven until melted and bubbly, another 10 minutes. (Mine didn’t take 10 minutes maybe 7-8 at most).

I have to say it was DELICIOUS!!! Was sorta on greasy side, I think I added bit too much Parm. The crust was like a soft wheat pizza crust. I will be making this again for sure, Oh and you can eat it like a slice if you don’t pile too much on top!
