Bruschetta Chicken Bake

I made this last week for dinner. It was really good. Got it from my mother.


  • 1 can diced tomato, undrained (I used a can of fire roasted with garlic it was in my pantry)
  • 1 box stove top stuffing chicken mix
  • 1/2 cup water
  • Tbsp garlic minced (I just used granulated garlic and used 1/2 Tbsp)
  • 1 1/2 lb. boneless chicken cut into bite size peices
  • basil/oregano
  • 1 cup mozzarella cheese shredded

Preheat oven to 400 degrees,

I thought the fire roasted would add a flavor but I think it was so flavorful anyway that it wasn’t noticed much.

Mix tomato, stuffing mix, water, and garlic, stir till moistened. I think I put my dry oregano in with the stuffing tomato mix, no worries if you do this.


Place chicken in 13×9 pan, sprinkle with oregano/basil (dry is what I used) and cheese. Then top with stuffing mix. Bake 30 minutes.

P1040855This is me not reading the directions and putting cheese on top of stuffing mix, I just moved the stuffing mix around and sorta incorporated it with the stuffing, it worked.



Served with a nice side salad easy and yummy.
