hamburger veggie soup

I made a hamburger veggie soup last week. I usually use like a beef stew meat but I made this quick one night because we had something to do. I actually got the idea from Uncle Ronnie when we visited him last year and he made this for us. He used canned mixed vegetables that he had grown on the farm (not from a metal can, canned like in glass jar like you do with jelly), then just added the hamburger and some extra water. If I get enough vegetables this summer I am so doing this. What easy week night meal to throw together.

Ingredients

  • 1 to 2 lbs hamburger meat
  • 2-3 cups frozen mixed vegatables
  • 1-2 Tbsp Worcestershire sauce
  • S&P to taste
  • 1 potato diced
  • 1 medium onion chopped
  • 1 can diced tomato
  • 1 can beef broth

In large pot cook, crumble your hamburger with your onion and S&P to taste (I probably used 1 tsp salt and 1/2 tsp pepper).P1040858

Once your meat is no longer pink add in your Worcestershire sauce.

Then add in your beef broth, tomatoes, and frozen veggie mix.

Finally add in the diced potato, make sure it is mixed well, then cover and let simmer on med low heat for about 20 minutes.P1040861I served this with some corn bread, and sprinkle of parm cheese.

Options: instead of adding in potato use small pasta like orzo or ditalini; add in chili powder, cumin, cayenne pepper, or adobe seasoning mix to give it a little flare; use fresh veggies, celery, carrots, cabbage, peppers; use ground turkey or mix of hamburger and ground pork or italian sausage.
